Happy St. Patrick's Day with Irish Rarebit

Rarebit is very popular small dish found all over Ireland and the British Isles, but Irish Rarebit is unique. Most people are familiar with Welsh Rarebit and, to be honest, they aren’t very different. While Rarebit may be pronounced like “rabbit” it actually means “tasty morsel” and is the variation of cheese toast that dreams are made of.

Unlike Welsh Rarebit, Irish Rarebit contains no beer (you heard that right) and has a surprise topping of chipped dill pickles or gherkins. Most Welsh Rarebit recipes call for eggs, either thickening the sauce or as a poached topping. While Rarebit was traditionally served at high tea, it has become a popular pub food and is the perfect app to start your St. Patrick’s Day festivities.

Tools you’ll need:

Ingredients:

  • 2 c mild cheddar or Havarti cheese
  • 2 Tbsp unsalted butter
  • ¼ c milk
  • 1 tsp white or cider vinegar
  • 1 tsp ground mustard
  • Salt and Pepper to taste
  • 6 slices or crusty wheat or soda bread
  • 4 Tbsp chopped dill pickles

Instructions:

  1. Preheat your broiler until hot. Lay out your bread on a covered baking sheet (we recommend using a Silicone Baking Mat.
  2. While broiler preheats, put cheese, butter, and milk in a saucepan over medium heat. Heat gently, stirring, until the mixture is creamy and smooth. Add the vinegar, mustard, and seasoning to the sauce.
  3. Toast the bread under the broiler on only one side for about 4 minutes. Flip over the bread and pour the sauce over the uncooked side of the bread. Place bake under the broiler for 2-3 minutes or until beginning to brown and bubble.
  4. Sprinkle with the pickles and serve immediately!
