Debbie's Birthday Pancakes

Years ago I attended a birthday party for a boy who attended my church. Matter of fact the whole church was invited. How big of a cake do you make for that many people? You don’t. You make pancakes! He wanted a pancake birthday. His mother made a million pancakes (it just seemed like a million). It was a delightful party.

While “breakfast” pancakes can be made for parties, I found several recipes for birthday pancakes made with cake mix. Almost all of the recipes are made with white or yellow cake mix and then sprinkles are added. “Tastes of Lizzy T” blog suggests using Pillsbury Funfetti cake mix. It even has buttercream glaze. Now this is a different take on the pancake. Matter of fact, it may be a game changer for breakfast. Check out their blog for more in-depth instructions. For the chocolate lover, use chocolate cake mix and add chocolate chips. Perhaps cooked chopped bacon could be added for the bacon lover. The possibilities are endless. It all depends on what the birthday person wants. So, in honor of my birthday (today) and National Pancake Day (Feb. 16th), give my birthday pancakes a try and enjoy.

Debbie’s Birthday Pancakes

Ingredients for pancakes

1 box yellow cake mix

1 1/3 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/3 cup butter, softened

2 Tablespoons granulated sugar

3 large eggs

1 1/3 cups milk

1 cup buttermilk

Sprinkles (optional)

Instructions

In a large bowl, combine the cake mix, flour, baking powder, and salt. Set aside.

In a separate bowl, cream the butter and sugar, add eggs until well blended.

Alternate adding the the dry ingredients and the milks, until just combined. Fold in the sprinkles. Batter will be thick.

Preheat your pan or griddle. Butter the pan.

Using a ¼ cup measuring cup, pour the pancake batter into hot pan and cook the pancakes until bubbles start forming in the batter. Flip the pancake and cook until done.

Note: When using a measuring cup to pour the batter, pour straight down and don’t move the cup. Let the batter flow on its own making a perfect circle.

Frosting

2 cups heavy whipping cream

1/2 cup Blueberry Maple Syrup

2 teaspoons maple extract (optional)

2 tablespoons meringue powder

Directions:

Whip the cream with all the other ingredients until stiff peaks are formed. Spread between layers of pancakes.
